Souffléd Crackers
Plain crackers soaked in ice water, dotted with butter and baked until they puff and brown. An almost forgotten trick that turns the dullest thing in the cupboard into something worth serving.
Ingredients
- plain crackers — 12 pcs
- ice water — 500 ml
- butter — 40 g
- salt — 1 pinch
Instructions
- Split each cracker in half through its thickness.
- Lay them in a dish and cover with ice water.
- Leave them to soak for exactly eight minutes — longer and they fall apart.
- Lift them out carefully and set them on a baking tray.
- Dot each one generously with butter and sprinkle with salt.
- Bake at 220°C (425°F) until puffed and well browned, about 12 minutes.
