Syrnyky
Little curd cheese pancakes, crisp outside and almost custardy within. Use dry curd cheese and as little flour as will hold them together — too much turns them into rubber.
Ingredients
- dry curd cheese (syr) — 500 g
- eggs — 2 pcs
- sugar — 3 tbsp
- all-purpose flour — 4 tbsp
- salt — 1 pinch
- vanilla extract — 1 tsp
- butter for frying — 40 g
- sour cream, to serve — 150 g
Instructions
- Press the curd cheese through a sieve so there are no lumps.
- Mix in the eggs, sugar, salt and vanilla, then add just enough flour for a soft dough that barely holds its shape.
- Shape into small flat rounds about 2 cm thick with floured hands.
- Dust each lightly with flour and shake off the excess.
- Fry in butter over medium-low heat for about 3 minutes a side — too hot and the outside colours before the middle warms.
- Serve immediately with sour cream and jam.
