Pineapple Lemonade
Ordinary lemonade with grated pineapple steeped into the syrup. Straining it out leaves the flavour behind without the fibres, and the colour turns a soft gold.
Ingredients
- water — 500 ml
- sugar — 200 g
- grated pineapple — 400 g
- lemon juice — 120 ml
- ice water — 1 l
Instructions
- Boil the water and sugar together for 10 minutes to make a syrup.
- Take the pan off the heat and stir in the grated pineapple and the lemon juice.
- Leave to steep until completely cool.
- Strain, pressing the pineapple well to extract the juice.
- Add the ice water and taste — adjust with more lemon or water as you like.
- Serve very cold over plenty of ice.
