Hot Chocolate
Real chocolate melted and boiled with sugar and water into a smooth base, then let down with scalded milk. Whisking it hard at the end raises a froth that stops a skin forming.

- dark chocolate — 45 g
- sugar — 50 g
- salt — 1 pinch
- boiling water — 240 ml
- milk — 720 ml

- Heat the milk in a pan until it steams, but do not let it boil.
- Melt the chocolate in a bowl set over hot water.
- Stir in the sugar and salt, then add the boiling water very gradually until smooth.
