Cheese Straws
Pastry folded around grated cheese, rolled and folded again several times so the cheese ends up in fine layers. Cut into thin strips, they bake in eight minutes and vanish faster.
Ingredients
- puff or shortcrust pastry — 350 g
- hard cheese, grated — 120 g
- salt — 0.25 tsp
- cayenne pepper — 1 pinch
Instructions
- Heat the oven to 220°C (425°F).
- Roll the pastry out to about 5 mm thick.
- Mix the cheese with the salt and cayenne and scatter it over half the pastry.
- Fold the plain half over, press the edges together, fold again, then roll back out to 5 mm.
- Repeat the cheese-and-fold twice more so the cheese ends up in thin layers.
- Cut into strips about 1 cm wide and 12 cm long and bake for 8 minutes, until crisp and golden.
