Baking Powder Biscuits
The American biscuit: flour, fat and liquid brought together fast and barely handled. Work the butter in with your fingertips and stop mixing while the dough still looks rough.
Ingredients
- all-purpose flour — 250 g
- baking powder — 4 tsp
- salt — 1 tsp
- lard or shortening — 1 tbsp
- butter — 1 tbsp
- milk and water, half and half — 180 ml
Instructions
- Heat the oven to 230°C (450°F).
- Sift the flour, baking powder and salt together twice — it makes a noticeable difference to the rise.
- Rub in the butter and lard with your fingertips until the mixture looks like coarse crumbs.
- Add the liquid gradually, cutting it in with a knife, until you have a soft dough; stop while it still looks shaggy.
- Pat out on a floured surface to 2 cm thick and cut rounds without twisting the cutter.
- Bake for 12–15 minutes, until risen and golden.
